I think soup is underrated, especially to start out dinner on a grey autumn evening. I try to make this soup, tom kha gai, but haven’t nailed it. It’s a chicken coconut soup that has a few ingredients I generally don’t have in my pantry: galangal root, kaffir lime leaves, and lemongrass. Oh, drat! We’ll just have to keep going out to dinner.
Here’s where I like to go for a good bowl of tom kha gai.

For some reason I’m not a soup person; except I do like chicken noodle when I’m ailing. I also have another rule: Don’t eat anything of which you cannot pronounce the name! Heck, I just learned recently that Thai was not something you wear around your neck! 🙂

You absolutely cannot beat Thai food! I am known as the “soup queen” in our family so I must try this one.
I searched recipes and am going to use one I found on Bon Apetite; after reading some of the comments, I decided to substitute ginger with galangal root instead since one reader said it was more authentic and improved the taste. Can’t wait to try it.
